That's the skill, really. Reading a floor across a few generations of guests and finding the tracks that get all of them up at once, rather than pleasing one table and losing the rest.
On the day
Simple needs. Somewhere with power, and cover overhead if the spot is outdoors. The sound system, decks, lighting and microphone all travel with the booking, so the venue isn't being asked to supply anything beyond the corner he stands in and a place to plug into.
